The influence of different cultures, which were, interlaced in this area for centuries-make the Istrian cuisine even more unique. The fruits of the earth and the sea flavored with olive oil and different kinds of Mediterranean spices make the basis of the domestic Istrian cookery. It is not always easy to count all fish specialties (gilthead, sea-bass grilled, lasagnas with lobster, scampi “Buzara” way, raw oysters, risotto with sea fruits) that are integral part of the menus of the most town restaurants. There’s also the rich and picturesque offer of the domestic Istrian dishes like “Fuži” (art od pasta) with venison stew, grilled cutlet (pork meat) and sausages with pickled cabbage, Istrian ham, sheep cheese, lasagnas with truffles.
